Red Pepper Summer Salsa
The centerpiece of this salsa recipe is our roasted red pepper strips, which easily give a tangy, smoky note to almost anything in no time. The preparation is a snap as the only cooking step is sautéing the zucchini, and the whole thing takes one pot and one bowl. You can choose whatever vinaigrette you like, but a spicier one would go best with the roasted peppers!
