Great for any time of year, this pasta medley is a delicious way to get multiple greens and vegetables into your diet today! It goes great with cooked shrimp, but you can also leave those out for a completely vegetarian meal. It’s a complex mingling of different flavors, but personally I think it’s the combination of sautéed pine nuts and red peppers that really works the magic!
